Ingredients
- 24 Heritage Half Shell Oyster, defrosted
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 shallots, finely chopped
- 2 cups fresh spinach, chopped (or 9 oz frozen, thawed and squeezed dry)
- 1/4 cup grated Parmesan cheese
- 1/4 cup Panko breadcrumbs (for extra crunch)
- Dash of hot sauce
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
Prepare your baking sheet by preheating the oven to 450°F (230°C) and lining it with rock salt or crumpled aluminum foil to stabilize the oyster shells.
Sauté shallots and garlic in butter, then add spinach and cook until wilted.
Remove from heat and mix in most of the Parmesan and breadcrumbs, season with salt and pepper.
Place defrosted Heritage Half Shell oysters on the prepared baking sheet and top each with the spinach mixture.
Sprinkle with the remaining Parmesan and breadcrumbs and bake for 10-12 minutes until golden.
Serve immediately with lemon wedges.
